ABSTRACT

Lycopene is a natural pigment mainly responsible for the deep-red colour of tomato. Lycopene can found in various natural products like tomato, red pepper, watermelon, and papaya. Due to its physicochemical and biological properties it attracts much attention towards it. Lycopene is only synthesized by plants. In preventing various diseases mainly degenerative diseases lycopene plays an important role. This article describes the various methods of extraction and isolation of lycopene.
